Refreshing Summer Punch
Why not try a refreshing summer fruit punch, with or without vodka for any occasion.
All you need is:
- 1 large cucumber, peeled and chopped into small chunks
- Small bunch of mint
- 500ml of Vodka (optional)
- Juice of 6 limes
- 200g white caster sugar
- 1-2 small melons, or could use ½ honeydew, ½ cantaloupe and ½ watermelon
- 1 liter of sparking water, chilled
Method:
Pour the vodka (optional), lime juice and sugar into a jug and stir. Add the chopped cucumber and half of the mint. Using a melon baller, scoop out as many melon balls as you and add them into the jug. Leave in the fridge to stand for 30 minutes. Top up with the chilled sparking water and add the rest of the mint. Serve. Enjoy.
